Lisa,Of the 3 hors d’oeuvres stations one is a sausage/cheese type scenario but the other two should be meatless. Of the other 5 courses (including dessert) only the entree will be meat based.The menu will not be finalized until just prior to the dinner so that the chefs have the most flexibility to chose the freshest ingredients. But….my above assumptions should stick. Will let you know ASAP if anything changes with the ratio of meat to non-meat dishes.Cheers. |
